I have never been that happy with the colour of my same-day whole wheat bread. The loaves just stay really pale, and their flavour is pretty bland too. I decided to try doing an overnight soaker method with my usual freshly ground whole wheat flour, using this recipe.

It was very easy to do and I was able to make three loaves out of the recipe (rather than two).

The smell of the bread and the colour of crust is WAY better than with the all-in-one-day method that I usually use. The bread is moist and not crumby. It tastes great, although I could tell that I forgot the second amount of salt on the first bite. Will definitely try this again.
